Over the weekend I attempted Good Food’s Apple and Cinnamon cake. It comes from the cute little collection of recipe books that they brought out a few years ago (they’re still available, I’ve seen a couple in my local library). They have one for just about every occasion from ‘Seasonal Salads’ to ‘Tempting Deserts’. They’re great because they use basic ingredients and are actually as quick as they say they’re going to be!
For example, this weekends cake took about 15 mins to prepare and then I could leave it to bake for 40 mins. That’s quicker than the time it takes to go shopping to buy a ready made dessert!
250g self-raising flour
1tsp ground cinnamon
1 tsp baking powder
100g light muscovado sugar
125ml apple juice
2 dessert apples (grated)
25g flaked almonds.
All you’ve got to do is mix the dry ingredients together and then add in the wet ingredients and stir well. Then pour the mixture into a lined 9inch round cake tin, sprinkle with the flaked almonds and pop it in the oven!
If you’re lucky enough to have apple trees, its a great way to use up your last few cooking apples! It’s a lovely autumnal cake. Although everyone loved it, I personally thought it was a little dry! I like my cake slightly under-cooked in the centre so that its nice and gooey, so next time I’ll be leaving it in the oven for just 35 mins instead of 40!
