‘Healthier’ French Toast

I’ve never had french toast. I know, I can’t believe it either. My mum hates it and I think that is probably why. She’s never made it and it’s not something I think of when I think of tasty brunch options. But, I have always wanted to try it. This weekend I decided to take the plunge and made a (sort of) healthy version for dad and I.

Another thing that has put me off is the fact you have to fry the toast. When I think of frying bread I think hot oil everywhere and a load of mess to clear up afterwards. However, I think this is due to my poor frying skills; over the past months I’ve realised your oil does NOT need to be boiling hot in order to achieve a golden, crispy Β outside on whatever it is your cooking. Now that I’ve got my head around that, there was very little mess to tidy and no pools of oil covering the hob. Result.

Serves 2

Ingredients:Β 

2 bananas, chopped

1 egg

1/2 tsp cinnamon

1/2 tsp vanilla extract

Splash of milk

2 slices of thick wholemeal bread

Toppings:

Maple syrup

Walnuts, a handful, roughly chopped

Cinnamon, to dust

1 banana, sliced


Method:Β 

1.In a hot, dry frying pan toast the chopped walnuts for 3-4 mins and then set aside for later.

2.In a jug, mash the bananas and mix with the egg, vanilla extract and cinnamon. Don’t worry if there is the odd lumpy bit of banana hanging around!

3.Pour the mixture into a shallow dish.

4.Heat a 1/2 tbsp of olive oil in a small frying pan.

5.Dip one slice of bread into the egg mixture, making sure both sides are well covered. Then transfer it quickly into the frying pan.

6.Fry the bread for 2mins on each side.

7.Serve topped with sliced banana, maple syrup the chopped walnuts and a dusting of cinnamon.

The dish is a great way to get your sweet fix on a Sunday morning!
