For a while I’ve been wanting to attempt a cake which is something a bit more than your average Victoria sponge or chocolate fudge. So when I came across Sophie Godwin’s Courgette, Lemon and Thyme cake entitled ‘Harvest Showstopper’ in the latest BBC Good Food magazine I thought I would give it a go.
Although it took twice as long to make as the magazine suggests (at least for an amateur like me!), it was worth it as the result was a perfectly pretty showstopper, with an all natural rustic feel courtesy of the crystallised thyme and candied lemon.
One thing I would mention, if your tempted to attempt it, is don’t hold back on sandwiching your cake layers with a good layer of icing as I ended up with a tonne left over! Not that I’m complaining!
