Yesterday I managed to run 10k in 55 minutes, which was by miles (excuse the pun), a personal best. I was pretty pleased with myself! Anyway, as a result, this morning I woke up seriously hungry! So, I decided to make something slightly more filling for breakfast in the form of Quinoa Porridge. It is just as quick and easy as your usual porridge oats but it makes a nice ligther alternative! The porridge itself takes less than 15 mins to cook up and can be topped with just about anything from frozen berries to chopped pecans, its all up to you!
1. Mix 1/3 cup of Quinoa with 200ml of Soya Milk and 1/2 teaspoon of Vanilla extract, then allowed them to simmer on a low heat for around 10 to 15mins. If you need to add a little boiled water as you go along to stop the grain from drying up.
2.Place your porridge in a bowl and top with whatever fruit you fancy, cover with drizzle of honey if you’ve got a sweet tooth like me and a sprinkle over your favourite nuts/seeds.
It is really that easy!
